Most Da Yu Ling teas are processed in the greenest fashion possible: with extremely light oxidation, and absolutely no roast apart from some heat to drive out water contents. Some would even claim that a minimal processing is required to retain the its terroir. A few long-time teamakers, however, disagree. They think improvements can be made via a difficult balance betwen the processing and the raw taste of the leaves. With the cost of Da Yu Ling oolongs being prohibitively high, most tea-makers would rather process their tea a few shades greener than risk possible mistakes. This did not at all faze the maker of our DYL102K. We think he has this tea nailed!


Brewing Recommendation: Use at least 2g of dry leaf per 30ml water, and always use off-boil to boiling water (95 degrees or higher) for every steep. Start with a flash rinse (a quick in-and-out steep to wash the dry leaves and warm up the brewing vessel); wait 1 to 2 mintues for the leaves to open up; start with 15 to 20 sec 1st infusion then brew to taste for subsequent infusions. We advise starting with these recommended parameters then experiment to find your own preferences.
